Bacon and Egg Cups



Preheat oven to 350 degrees.

Using a muffin/cupcake pan, line the holes with a slice of bacon,

pressing the bacon around the sides of the hole, not on the bottom.

Crack one egg into each hole.Sprinkle with salt and pepper and cheese if desired.

Bake at 350 degrees for 20 minutes or until the egg is the doneness you like.

These bacon and egg cups should pop right out of the pan.


6 Eggs

6 Slices of Bacon

1 Once of Cheese

Salt & Pepper

Frittata With Ham and Roasted Pepper



In a bowl, with a whisk, whisk eggs, milk and Dijon mustard. Add croutons, ham and half the cheese, half bell peppers and half green onions. Pour the mixture of eggs in a greased pie plate of 9 inches or an 8 inches greased square pan. Sprinkle with remaining cheese, bell pepper and green onion.

Cook in a preheated oven of 350 F for about 20 minutes or until the frittata is golden and the eggs are set. Keep cooking under the preheated grill for about 2 minutes or until frittata is golden and is lightly puffed. Put the pan on a rack and let cool for 5 minutes. Use a spatula to loosen the edges from the pan and cut in wedges.


5 Eggs

1/2 cp of Milk or half and half

1 tablespoon Dijon Mustard

1 cup crouton

1/4 cup ham, chopped

1/2 cup Fontina or provolone cheese, grated

1/4 cup roasted Red Pepper, drained and chopped

1/4 cup Green Onion, finely chopped

Sausage Breakfast Muffins (OAMC)



Line muffin tins with paper liners, and set aside.

Fry, crumble and drain sausage.

Preheat oven to 375 degrees.

Mix together bisquick, cornmeal, eggs, and milk.Add drained sausage, and cheese, and stir well.

Ladle the filling into the prepared muffin tins, filling almost to top.

Bake for 11-15 minutes.

Allow to cool completely.


1 lbs of Chorizo or Breakfast Sausage

4 cups Bisquick

2 cups Cornmeal

6 Eggs

3 1/2 cups of Milk

3 cups shredded cheese
